Sprouts salad with Tête de Moine, gin, extra virgin olive oil, lime zest.


  • Tête de Moine to taste
  • 200g mixed sprouts and salad leaves
  • 10ml (1 spoonful) gin
  • Extra virgin olive oil
  • 1 lime



  • Lime: use a potato peeler to remove the green peel, avoiding the white part. Cut into thin strips.

Divide the salad and sprouts between 4 small bowls, add gin, extra virgin olive oil, salt, crushed pepper and lime zest. Form small Tête de Moine rosettes, place them in the centre of the salad, and serve.
