Vodka prawns with pearl barley, avocado, Raclette and ginger.


  • 100 g Raclette
  • 30 cl Russian Vodka
  • 100 g shelled prawns
  • 20 g butter
  • 100 g pearl barley
  • extra virgin olive oil to taste
  • 1 avocado
  • ginger to taste
  • pepper



  • Vodka prawns: melt the butter in a frying-pan and fry the prawns for a few seconds. Quench with the vodka and set them aside.
  • Barley: rinse the barley in cold running water and then boil it for 25 minutes in lightly salted water. Drain and season with oil and ginger, and spread it on a tray to cool it more quickly. Peel the avocado, remove the stone and dice it to make cubes of about 5 mm. Also dice the Raclette to the same size. Gently mix all the ingredients together.

First arrange the seasoned barley in the middle of a side dish. Garnish with the fried prawn and complete with a dash of ground black pepper.
